White chocolate and mascarpone tart recipe

Who doesn't love a good tart? These are just too good to resist. And so bloomin easy to make (with a little cheat method!)

I made some of these for a dinner party this weekend and thought I'd share the recipe with you guys. Please excuse my fruit coulis looking like I've just blobbed it over the plate from a great height but as I was taking the photos it started to spread as if it were alive!!!

Anyway on to the recipe.
For the pastry

250g plain flour 
125g butter (chilled)
3 tbsp caster sugar
1 large egg

Pre heat the oven to 200ºC (400ºF/Gas mark 6)

Place the flour, butter and sugar into a food processor and pulse until it resembles breadcrumbs. Add the egg  and process until the pastry draws together into a ball. 

Roll out the pastry, line the tart tins with it (make sure they are loose bottomed tins) and then chill for 20mins. 

Line the pastry cases with greaseproof paper and fill with baking beans. Bake blind for 10 mins, then remove the paper and beans and bake for another 5 mins. Remove from oven and allow to cool. 

Here's the cheat bit! If you don't want to or don't have time to make the pastry why not buy ready made pastry cases. I had to do this on Saturday as I wasn't feeling very well and needed a short cut to make my prep easier. I picked up some pastry cases from the shop and had these made in no time at all. The only difference with shop bought cases is that they are no way near as deep as home made cases but the filling goes a lot further, and if I'm totally honest with you I prefer them more shallow as the filling is extremely sweet! 
For the filling

200g white chocolate
450g mascarpone cheese 
150ml double cream 

Place the white chocolate and 125g of the mascarpone into a heatproof bowl set over simmering water and stir until melted. Add the remaining mascarpone and to the bowl, whisk briskly until smooth, then whisk in the double cream.

** Resist the urge to eat every bit of it at this point**

Pour the mixture into the pastry cases and chill for 3 hours or until softly set.

When you are ready to serve place fresh berries of your choice on the top and sprinkle with icing sugar. I like to serve mine with a fruit coulis too. I do usually make mine with fresh raspberries and strawberries but again due to illness had to use a shop bought one (Tesco's finest) and it was delicious. 

Et voila.  A great dessert to wow your friends and family with. 

This recipe makes 6 tarts but if you buy the more shallow tart cases you will get so many more. I actually got 12 this time and we're still eating them now!!!!
