One Pan tricolore meatballs À la Rosie Londoner

I'm not a cook as you know but every now and then something comes over me from nowhere and I go all Delia, well Rosie in this case! On Friday I felt the urge to rustle up something good, and I'd recently read Rosie's recipe for one pan meatballs. So easy, it just couldn't go wrong, could it? Actually anything can go wrong for me where cooking is concerned!!

The kids and Mr C had all been warned of the forthcoming event, that I was making no promises and to have the local Chinese on speed dial! 

Rosie's recipe is so simple and easy I'd whipped it up in a flash. Just look at those delicious meatballs bubbling away in that tomato sauce. The recipe says to use 20 meatballs which is a good amount for two people so I doubled up as they were four of us. I didn't double the sauce and cheese quantity, just added a little more and actually it turned out just right. 


Everyone had dispersed to different locations around the house so I hollered up the stairs, "dinners ready!!!". Down they came with a slightly trepidatious look on their faces. I did get a "smells delicious" from Emily so that was promising! We all dived into the dish that I had proudly placed in the middle of the table. 

Look at that molten cheese. I could so eat it again right now.

We had ours with some crusty bread, salad and some potato wedges, greedy little devils that we are and we washed it down with a nice bottle of crisp white wine, and every last little drop of the spicy sauce was mopped up, not a smidgen left! So I'd call that a resounding success wouldn't you? I've added the recipe to my non-existent repertoire and it WILL be cooked again thats for sure. I loved it because we all sat down as a family, which we don't do very often these days, and tucked in together, in fact we were sword fighting with our forks to see who could get the cheesiest balls!

  2. Being a non meat eater, I wouldnt eat it but oh my, it looks delicious. Right up my sons and husbands street, so I may give it a go! Im loving the description "easy recipe" thats a winning description right there!
