Baileys Cheesecake




Probably the easiest recipe for the dreamiest Baileys cheesecake you'll ever come across.

NO cooking required!

Only the brave and thin should count the calories in this one but holy moly, it's good, so just go ahead and indulge yourself.

It takes no time at all to prepare, the hardest part is leaving it alone to chill for three hours in the fridge!!!

What you will need.

9 inch cheesecake tin with a loose bottom!!!
100g unsalted butter
250g biscuits such as digestives/ Hobnobs
450g cream cheese
1 (good) slug of Baileys!
100g icing sugar
200ml double cream
60g chocolate (dairy or plain as you prefer) I prefer dairy.

Let's get started.

First of all bash the hell out of your digestives, you'll feel much better afterwards. You can blitz them but bashing is good! I put mine in a large bowl and bash the poor biscuits with the end of my rolling pin.
Next gently melt the butter in a saucepan. Add the crushed biscuits and mix them in until the butter has been absorbed.

Remove from the heat and while still warm, press the mixture (using the back of a spoon) into the tin and leave to set in the fridge for an hour.

While it's chilling, grate your chocolate and set aside in the fridge too. I like to get Mr C to do mine as it's a messy job I don't like. Choc flakes go everywhere, you have been warned.
When your cheesecake base is ready to go, whip the cream in a bowl until it forms soft peaks. I don't have a fancy mixer so use my trusty handheld that I've had for donkeys.
In a separate bowl, beat the cream cheese until it's soft. Beat in the icing sugar and your good slug of Baileys. Go on, put in an extra little dribble like I do, you know you want to. It's Baileys for heavens sake, you just have to!
Fold this mixture into the whipped cream along with three quarters of the grated chocolate. When the mixture is smooth, pop it into your tin and even out over the biscuit base.
Sprinkle over the remainder of the chocolate for a lovely finish or decorate with chocolate shapes of your choice. I used chocolate stars for my Christmas one.
Cover and put in the fridge for at least 3 hours to set properly or preferably overnight, if temptation doesn't grab you!! I have to hide mine right at the back of the fridge so I forget about it and the kids don't know it's there!

Now then, what do you do when you've made a yummy mixture in a nice big bowl? You lick the spoon and clean the bowl of course just like we did when we were kids, but hey my kids don't get a look in with this one, this baby's all mine. 
This cheesecake is fabulously rich so I do actually serve in quite small portions (you can always go back for more) and despite the mammoth amount of calories I do have mine with cream, hell, if you're gonna be naughty why not go the whole hog???
